Mustard Seed Salmon

Creamy, savory deliciousness. We are huge fans of salmon for all of its health benefits. Salmon is a brain-boosting, immune-boosting omega-3 powerhouse. And let’s be honest, it just tastes dang good. Especially slathered with herbed Dijon and topped with a creamy dill dressing. This dish is incredibly flavorful and the salmon stays moist, light and flaky. It’s the perfect healthy dinner.

Creamy Dill Dressing

  • 1 cup sour cream
  • 2 Tbsp fresh dill, chopped
  • ¼ cup red onion, finely diced
  • 2 Tbsp whole grain Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp salt

Baked Salmon

  • 2 Tbsp whole grain Dijon mustard
  • 1 clove garlic, finely minced
  • 1 Tbsp dill or parsley
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 4 Aqua Star Salmon Fillets, thawed and patted dry

To Make:

Preheat oven to 425° F. Whisk together all creamy dill dressing ingredients in a medium bowl and set aside. In a small bowl, combine Dijon mustard, garlic, dill or parsley, olive oil and salt to create a paste. Place salmon fillets on a foil lined baking sheet (skin side down). Top each salmon portion equally with the mustard paste and bake for 15–18 minutes. Top baked salmon with the creamy dill sauce and serve immediately.

Serving Suggestions

Serve with a squeeze of lemon and alongside roasted asparagus or vegetable of your choice.
Dressing can be made ahead of time and kept in the refrigerator for up to 2 days.
